Low-Carb Cheeseburger Casserole

Going low-carb was never so easy. Here's a great recipe for a cheeseburger dinner that will not have you missing the bun!

You Will Need:

1 1/2 lb. ground beef or turkey
1/4 onion, grated
1/4 red bell pepper, grated
3/4 tsp. salt
1/4 tsp. black pepper
1/4 tsp. cumin
1/4 tsp. garlic powder
1/4 of chili powder (optional)
1 large tomato, seeded and chopped
Nonstick cooking spray
1/2 cup finely shredded cheddar cheese
1 1/2 cup crispy fried onions
Fat-free blue cheese salad dressing


Preheat the oven to 350 degrees.

Place your ground meat into a large skillet on medium heat. Stirring frequently, let meat brown until pink is almost (but not totally) gone.

Drain away excess oil and return the meat to the pan. Add the grated onion, bell pepper, salt, pepper, cumin and garlic powder. Stir in chili powder (if desired).

Allow the meat to fully brown and mix in tomato.

Spray a baking dish with non-stick cooking spray and pour the meat mixture into the dish. Sprinkle the cheese over the meat mixture.

Place the casserole into the oven for about 15 minutes, until flavors meld and cheese melts.

Sprinkle the fried onions over the top and return the dish to the oven to cook for another 5 minutes, until onions are brown and crispy.

Scoop out servings onto a plate and serve with blue cheese salad dressing, or your favorite burger condiments.
